At “Hokkai washo Nakajima” inside Sapporo Art Hotel, traditional washoku is cooked by a master of Japanese cooking that knows everything about fine seasonal ingredients of Hokkaido in a subtle yet bold manner using techniques that brings out best flavors of the ingredients under a goal of pursuing slow foods using local products.
