Ramen Full of Vegetables!

Ramen has been known as the typical noodle dish came from Japan with an incredible taste that sometimes hard to explain. The popularity of ramen have been spread around the world, which makes ramen is one of the most wanted meal to try among tourist during their visit to Japan.

I have written a halal version of ramen before, this time I want to share with you the deliciousness of Yasai Miso Ramen, a ramen that is full of vegetable. While a common ramen in Japan is usually contained pork meat, this recipe is also vegetarian-friendly, that is why you should try this recipe.

This recipe will make about 4 servings.

Ingredients

 

  • 4 cloves of garlic
  • 4 cm piece of ginger
  • 4 star anise pods
  • red chili powder
  • 1 tablespoon of Chinese 5 spices (optional)
  • 5 tablespoons of miso paste
  • 2 aburaage
  • carrot
  • bhok choy
  • bean sprout
  • 3 shitake mushrooms
  • 1 large leeks (negi)
  • ramen noodles
  • and the last is my secret recipe which is 2 piece of large shallots

Cooking Instructions

 

  1. cut all the vegetables into proper sizes to eat, basically, you could have any kind of vegetable you want but I don’t suggest any kind of starchy vegetables
  2. cut the aburaage into bite pieces
  3. cook the ramen noodles for about 4 minutes, after cooked put it in a bowl with cold water and ice to make it stop cooking for about 5 minutes then drained the water
  4. prepare a large pot and add about 8 cups of water, turn on the heat and get it boil
  5. grate the garlic into a garlic paste and minced the shallots, add both to the pot after the water is boiling and turn the heat to medium-high
  6. grate the ginger and add it to the pot
  7. add the star anise pods and let them boiling for about 3 minutes
  8. after boiling for 3 minutes, add the Chinese 5 spices, red chili powder, and the miso paste, mix it well until all the miso is dissolved
  9. add the vegetables and let them cook for about 2-3 minutes, don’t cook it too long, I personally like crunchy vegetables than a mushy vegetable in my ramen
  10. after 2-3 minutes, turn off the heat
  11. get your ramen bowl
  12. put the enough noodle
  13. add some of the vegetables from the pot into the ramen bowl
  14. pour about 2 cups of the ramen soup into the bowl
  15. Your yasai miso ramen is ready to serve

Is the recipe easy to follow right? You absolutely should try this recipe, because this is one of my favorite ramen recipe that I often cook at home for my family. Also, don’t forget to always choose the halal miso paste ones that the regular ones and of course you can choose any kind of vegetables you want for your ramen.
